Tomato Sauce

  • 2 ¼ lb peeled tomatoes
  • 1 small onion
  • 1 Carrot
  • Parsley
  • Celery
  • Basil
  • ¼ Cup Olive oil
  • Salt & pepper to taste

Put the peeled tomatoes in a saucepan with the oil, vegetables and herbs.

Cook at moderate heat for about half an hour with the lid on; then take off the lid, allow to thicken well and add a little salt.

If after cooking for an hour the sauce is still too liquid, leave it on the stove for a little longer. When the sauce is cooked, check the taste and add your salt and pepper.
